Slow Cooker Breakfast Scramble

By Jennifer Hill July 20, 2016
Ingredients:
Tube of sausage (I used pork)
2-3 cups shredded cheddar cheese
Bag of frozen hash browns
12 eggs
1 cup milk
Optional: onions, peppers, bacon, ham, tomatoes, etc. Anything you want to add, go for it! Using spicy sausage would be good also.

Instructions:
1. Brown the sausage. Spray slow cooker with cooking spray. In the slow cooker, mix hash browns, browned sausage, cheese and any other ingredients you choose.

2. In a separate bowl, whisk the milk and eggs and then pour over the mixture in the slow cooker. Mix it in.
Cook on low for 6 to 8 hours.

3. Eat as is and topped with additional cheese, or serve on tortillas with guacamole and/or salsa.

I needed this for an 11 am brunch so I had it all ready to go in the removable insert before bed and pulled it out of the fridge at 4:30 in the morning to put into the slow cooker to cook the rest of the morning. Everyone loved it – kids and adults.
