Mini Strawberry and Cream Biscuits

A mini twist on an old-fashioned dessert! Bite-size strawberry and cream sandwiches are sure to be a hit with little kids, big kids, and the adult kids too! 

Don't feel like putting lots of mini sandwiches together? Bake the biscuits and then set the toppings out so everyone can make their own!

Ingredients:
1 can refrigerated biscuit dough, jumbo
1 pound strawberries, washed and sliced
Whipped cream or whipped topping*, thawed

Directions:
1. Open the can of biscuits and separate. Cut each large biscuit into quarters. Gently reshape quartered biscuit pieces. Place on baking sheet and bake as directed on package - watch closely, this may take less time because biscuits are now smaller.

2. Once biscuits are done baking, set aside to cool.


3. After cooling, slice mini biscuits in half and spread with whipped cream or whipped topping. *Whipped topping will hold up much better than whipped cream if you're not serving immediately.


4. Place a few strawberry slices on the bottom half the biscuits and put the top piece back on to make a sandwich. Repeat with all biscuits. 
Arrange on a platter and refrigerate until serving.
