As far back as I can remember, our family enjoyed my mom's homemade blueberry muffins on the weekends. This is such a simple and quick recipe, even the kids can pitch in to help make them. You can make them with frozen berries or fresh berries from the grocery store. But if it's July, then it's absolutely worth making them with fresh-picked berries from your local farm!
Ingredients:
2 cups of flour
3 teaspoons of baking powder
Not quite 1/2 teaspoon of salt
8 tablespoons of sugar
1 egg, beaten
1 cup buttermilk (regular milk is Ok too)
3 tablespoons of melted butter
1 cup blueberries
Directions:
1. Preheat oven to 425 degrees.
2. Melt butter and combine with egg and milk. Set aside.
3. In a large bowl, add dry ingredients and sift together.
4. Add blueberries to sifted, dry ingredients.
5. Add liquid ingredients to dry, mixing only until moistened. Don't over mix; avoid breaking the berries!
6. Spoon into muffin pans.
7. Bake at 425 degrees for 20-30 minutes or until golden brown.
Enjoy on their own or slice in half while warm and spread a bit of butter. YUM!
