Greek Salad

This salad makes a great lunch, side dish or dinner with the addition of some protein. Plus tomatoes and cucumbers are at their peak of flavor and plentiful in the supermarket and from your local farmers right now!

Cherry or grape tomatoes
Kalamata olives
Green onions
Feta cheese
Dressing of your choice 

Optional add-ins:
Chicken (or chicken nuggets)
Chopped deli meat
Artichoke hearts

1. Chop the lettuce, slice the tomatoes in half, slice and quarter the cucumber and slice the green onion and olives.
2. Arrange the toppings on the lettuce and drizzle on a little balsamic vinegar and olive oil, or use your favorite salad dressing.
