Ingredients:
1 lb shrimp, cooked
1 tbsp garlic (crushed)
2-3 zucchini
1 medium onion
2 tsp olive oil
1 tsp black pepper
2 tsp salt
Chili garlic sauce, to taste (**Not necessary for the recipe, I personally put this on EVERYTHING..yum)
Prep time: 20-30 min Cook time: 10-15 min |
Instructions:
1. Heat olive oil on medium heat in a large-sized pan.
2. Chop onion and saute until golden.
3. While onion cooks, peel the entire zucchini with a potato peeler and add it to the pan.
(I ALWAYS place waxed paper on my cutting board whenever I cut/chop anything for easy cleanup!)
4. After about 10 min, remove the zucchini and let it drain (this step will make the dish less soggy).
5. Add the crushed garlic and shrimp to the same pan and cook a few minutes, then add the zucchini back into the pan and toss to combine.
6. Let cool just a few minutes and serve!
