Leftover Chicken Lettuce Wraps

Back to school, busy weeknight dinners, too many leftovers? Well... THIS was just way too easy, even for me! And my daughter (the world's pickiest lunch-time eater) loved it. 

Ladies and Gentlemen... Leftover Chicken Lettuce Wraps!

Ingredients

  • Leftover chicken
  • Lettuce leaves
  • Tomato slices
  • Ranch dressing

Process

  1. Rinse the lettuce leaves (leave them large enough for wrapping).
  2. Slice the chicken and place on the lettuce.
  3. Add tomato slices.
  4. Wrap, and dip in the ranch dressing on the side.
  5. Voilà!

Other variations can include:

  • Salami, ham, and bacon
  • Leftover roast beef with mayo and tomatoes
  • Egg-salad
  • Tuna-salad
  • or all veggies!
