Just Beet It!

Beets get an upgrade when made into this yummy hummus.

We know beets aren’t normally picked by kids as their favorite veggie, but with some help from The Hummus & Pita Co. founder Dave Pesso, they may soon inch towards to the top of the list.

Pesso gets his five-year-old daughter to eat beets by blending red beets with chickpeas, garlic, tahini, and lemon juice to make a colorful pink hummus. Not only is it fun to eat, but also full of protein and dietary fiber!

Makes 16 4-oz. servings

Ingredients: 

  • 3 cups chickpea
  • 2 cups cooked red beets
  • 1½ cups tahini
  • ½ cup water
  • 1/3 cup fresh garlic
  • 2½ tbsp. extra-virgin olive oil
  • 1½ tbsp. lemon juice
  • 1 tsp salt
  • ½ tsp cumin

Instructions:

  1. Mix all ingredients in a food processor until smooth.
  2. Refrigerate to store.

Enjoy with pita chips or raw vegetables.
