We know beets aren’t normally picked by kids as their favorite veggie, but with some help from The Hummus & Pita Co. founder Dave Pesso, they may soon inch towards to the top of the list.
Pesso gets his five-year-old daughter to eat beets by blending red beets with chickpeas, garlic, tahini, and lemon juice to make a colorful pink hummus. Not only is it fun to eat, but also full of protein and dietary fiber!

Makes 16 4-oz. servings
Ingredients:
- 3 cups chickpea
- 2 cups cooked red beets
- 1½ cups tahini
- ½ cup water
- 1/3 cup fresh garlic
- 2½ tbsp. extra-virgin olive oil
- 1½ tbsp. lemon juice
- 1 tsp salt
- ½ tsp cumin
Instructions:
- Mix all ingredients in a food processor until smooth.
- Refrigerate to store.
Enjoy with pita chips or raw vegetables.
